Ethiopian Berbere
In the highlands outside Addis Ababa, families still
roast chilies over open fire, grinding them by hand
with fenugreek, ajwain and korarima. This is the
heart of Tadeso — the fire that everything else is built around.

Hungarian Paprika
From the sun-drenched fields of Kalocsa, we source noble sweet paprika cured for months in wood-smoke huts. It gives the sauce its deep ruby color and long, warm finish.

Japanese Wasabi
Fresh hon-wasabi from Shizuoka is grated the day it arrives. Its clean, floral heat lifts the smoke and fire — a final, quiet note that changes the entire composition.

Tadeso began at a kitchen table in Addis, in a house that always smelled of roasting chilies. What started as a grandmother’s blend — passed from her mother, and hers before — is now bottled one small batch at a time, reimagined with the flavors of the world she never got to see.
